Ingredients

  • 1 1/2 Cups Finely Ground Almond Flour (do NOT use Almond meal)
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup Sour Cream (Full fat)
  • 2 Eggs
  • 2 tbsp Butter
  • 1/2 cup Shredded Cheddar Cheese (half in the mix, half on top)

Directions

Step 1

Preheat your oven to 400 and prepare a baking sheet. I prefer to use parchment paper to prevent sticking.

Step 2

Mix all the ingredients together in a bowl, saving half the cheese for topping

Step 3

Let all the ingredients sit for at least 5 minutes. This is critical for the final texture!

Step 4

Drop large spoonfulls of the batter on the baking sheet, leaving a couple inches between each other

Step 5

Bake for 8 minutes (for convection ovens) and up to 12 minutes (for traditional ovens) or until golden brown on top.
